Hello, I would like a GreaseMonkey script to change all occurrences on Amazon search results pages like "Only 5 left in stock - order soon." to say "ONLY ONE LEFT! IT'S THE LAST ONE!! ORDER IT NOW BEFORE SOMEONE ELSE DOES!!!"

There are several text replacement userscripts /extensions that can be configured to do what you want.

You could go further and hook the click event for all the buy buttons to say "Too late!" Think of how much you'll save.
